Discover new music with Audio/Visual. This collaborative series celebrates the intersection of art, music and beer, featuring a record label, four bands and one visual artist. Every three months, the bands, the record label and the artist will switch, making room for continued discovery of emerging music of all genres. Audio/Visual Lager is super refreshing, making it the ideal beer for concerts, green rooms, backyards or wherever you tune in. Audio/Visual is brewed with pilsner malt and brown rice and cold aged for 4 weeks for the most refreshingly clean, and crisp finish possible. We use Wai-iti hops for fresh notes of lime and mandarin citrus to round out this easy drinking lager.

Matter of Fact

Matter of Fact, our easy drinking Dry Hopped Blonde Ale, is designed to refresh. A subtle but present dry-hop of Ella, Centennial and Citra hops puts a citrusy, tropical twist on a clean blonde ale. With a floral, grapefruit nose and bright haze, this beer is perfect for someone who loves a New England Style IPA but is after something a bit more sessionable.

Our ʻRhyme & Reasonʼ Citra Pale Ale showcases the very best hops have to offer, but at only 5.7% abv. It’s far more sessionable than your typical American IPA. The flavour and aroma of Citra, Centennial, Chinook and Simcoe hops prevail without excessive bitterness for maximum drinkability. Malt sweetness in the background complements the hops for a crisp finish that will make you keep going back for more!

Pouring a beautiful soft cloudy pink and smelling of a tropical vacation, our Guava Gose is like a sour mashed wheat beer dosed with the largest batch of guava we could get away with. The base Gose has a balanced lemony tartness from the presence of malted wheat, Himalayan pink sea salt and coriander with a flowery bright smoothness from guava. The end result is a perfect balance of tart, sweet, and sour, leaving you refreshed and wanting more.

This DIPA is made with massive amounts of Simcoe and Citra hops, which are bursting with notes of bright grapefruit citrus, juicy tropical mango and passionfruit, with pleasantly dank, piney undertones, and a touch of lactose for sweetness.

IPA No. 16 is a refreshing blend of juicy and floral. Brewed in honour of International Women’s day, the nose is fragrant while retaining a strong backbone of hoppy aromatics. The complex hop blend was designed by the Pink Boots Society, an organization created to assist, inspire, and encourage women in the beer Industry, and lends a subtle floral sweetness. The beer finishes with an effervescent pop of pithy grapefruit for an elevated IPA with a distinct and striking flavour combination.

A whole lot of Ontario-made goodness went into this collab with Matron Fine Beer! The crew at Matron is well known for making beer inspired by what grows around them. So we brewed Shuns Wheat IPA with 100% Ontario-grown wheat and barley from Barn Owl Malt in Belleville, ON - not far from Matron's brewery in Bloomfield, ON. Made with Mosaic, Amarillo, and Cascade hops, Shuns delivers noticeable floral and stone fruit aromas with a smooth, crisp body.

Dream Merchant

It's not every day we get to use 50kg of roasted sweet potatoes in a beer. Dream Merchant is a hugely flavourful Imperial Stout based on a classic comfort food: candied yams! We took in-house roasted sweet potato, marshmallow, brown sugar, orange zest and spices and turned it into a smooth, sweet stout. Tons of flavour, with a roasty balance that makes this brew far more sessionable than you'd expect from its 10.8% ABV.

Cautionary Tale

Cautionary Tale is a New England Style IPA that combines classic, new-school and experimental hops! The combo of old-favourite Citra, recent-upstart Sabro, and HBC 472, an American hop so new it that doesn't even have a name yet, delivers a wildly complex flavour profile. Coconut and lychee aromas mingle with hints of oak and a smooth creaminess from the experimental HBC 472.

Tweezer

Our Toronto brewery is all about experimentation. So we handed the keys to the brew kit over to some of our Hamilton brewing team to bring recipes of their own to life! Tweezer is an Altbier from the mind of Zach Vernon, who's been brewing with us for nearly 5 years. Altbier, which translates to "old beer," is one of Germany's oldest beer styles, endemic to the city of Dusseldorf. Crisp and clean with a strong malt aroma, Alts survived the Lager mania that swept Germany in the late 19th century. Tweezer puts a bit of spin on this classic style with a clean, malty body accented with Ariana hops, a new German variety with notes of berries and a hint of woodiness.

This Sour DIPA is dry hopped with some of our flavourful favourites: Citra, Galaxy and Azacca. Expect notes of mango with a hint of pine from the hops, while the crisp sourness delivers a refreshing finish and a background that'll have you thinking "Sour Patch Kids."

There's nothing wrong with a little dessert! Our latest small-batch sour is called Cherry Pie - take one sip and you'll see exactly why. We used a blend of sweet and sour cherries with a touch of almond and vanilla for a tart, refreshing sour that's balanced by a hint of sweetness. It really is like biting into a slice of cherry pie with a graham cracker crust!

Rolling Thunder

When it comes to hop-forward flavour, this brew definitely brings the thunder. Rolling Thunder New England style DIPA gets its unique character from a generous hopping of Strata, a relatively new hop from Oregon, and Zappa, a domesticated hop originally grown in the mountains of New Mexico. Expect aromas of Seville orange, sweet fruit and light pineapple, with big flavour notes of green melon and grapefruit.

Bourbon Barrel-Aged 2020

That’s right it’s back! A super-charged version of our Imperial Porter, this dark beer was aged in Kentucky bourbon barrels for over a year. It delivers a smooth combination of rich chocolate flavours from our Imperial Porter, married with vanilla and warming alcohol from the barrels. Coming in at 11.5% ABV, in 500ml bottles – this one will warm you up this winter, or cellar it for next year!

Origin of Darkness: Mikkeller Collab

IMPERIAL STOUT AGED IN BOURBON BARRELS W/ COFFEE AND ALMOND MILK When you’re brewing with international beer legends like Mikkeller from Denmark, you’ve got to make something outside of the box! In an homage to their iconic Beer Geek Breakfast series, we brewed a vegan-latte inspired imperial stout. Aged in freshly emptied Kentucky Bourbon Barrels, this brew gets a jolt of caffeine from roasted coffee beans from Detour Coffee, and some smoothness with Almond Milk from Earth’s Own plant based beverage company.

IMPERIAL STOUT AGED IN CANADIAN RYE WHISKEY BARRELS W/ CINNAMON, MARSHMALLOWS, COCOA POWDER, LACTOSE Our pals from Civil Society spend most of their time in the muggy Florida heat. So we wanted to give them a taste of a Canadian winter! We collaborated on a beer inspired by the perfect cold-weather cocktail: Fireball and hot chocolate. This imperial stout is brewed with lots of cinnamon, marshmallows, cacao powder and lactose sugar. After getting aged in Canadian Rye Whiskey barrels for 9 months, this Florida/Canada lovechild is ready to drink!

Origin of Darkness: Pohjala Collab

BALTIC PORTER AGED IN COGNAC BARRELS, W/ PLUMS About 7,000 KM and the Atlantic Ocean separate us from our friends at Brewery from Estonia. But geography doesn’t mean a thing when kindred brewing spirits come together! We put a Baltic Porter base into freshly emptied XO Cognac barrels from France to age for 9 months. After that we added plums to elevate the sweet stone fruit character. This beer exemplifies the beautifully deep, sweet, and rich cognac flavours. Pour a glass and curl up in front of a roaring fire, you fancy f*ck.

Origin of Darkness – Siren Collab

Sound the alarm – for the first time ever in our Barrel-Aged program, we’re using RUM! Siren Craft Brew from England wanted to create something that exemplified the sweet rich flavours of dark stone fruit, so after 6 months in 10-year-old South American Rum barrels we added Prunes, Raisins and Dates to a Baltic Porter base. Think sticky toffee pudding, like Nan used to make.
