Introducing Collective Arts Bourbon Barrel Aged Maple Syrup! We’ve just released a batch of Premium Grade A Canadian Dark Maple Syrup in our online store and at our Hamilton and Toronto breweries.
So, how did we end up bottling maple syrup? Well, it all started with this year’s Origin of Darkness collab with our friends at Mikerphone Brewing.
Our Origin of Darkness barrel-aged series always looks to use unique ingredients inspired by the different international partners we work with. This year, we set out to create an Imperial Stout aged in bourbon maple syrup barrels, but it turns out that those don’t really exist. So we took it upon ourselves, infusing imported bourbon barrels with maple syrup.
The result: Canadian dark maple syrup in freshly emptied Bourbon barrels that aged for 3 months, half of which ended up back in our Origin of Darkness Mikerphone collab and the rest – we bottled! This syrup is a delicious blend of sweet maple, vanilla, toffee, caramel, charred oak and just an ever so slight alcohol warming from the remnants of bourbon in the barrels.
